Lime & Mint Gin Highball

Ingredients

  • 2 oz London Dry Gin (or substitute vodka)
  • 0.75 oz fresh lime juice
  • 0.5 oz simple syrup (optional for a sweeter twist)
  • Top with chilled club soda or tonic water
  • Ice (fill a tall glass)

Garnishes

  • 1 dehydrated lime wheel (Bar Necessities)
  • 1 fresh mint sprig

Instructions

  1. Fill a highball glass with ice.
  2. Add gin, lime juice, and simple syrup (if using).
  3. Stir lightly to chill and combine.
  4. Top with club soda or tonic water.
  5. Garnish with a dehydrated lime wheel and a fresh mint sprig.

Tips & Variations

  • Mocktail: skip the gin and use extra soda water plus a dash of non-alcoholic bitters.
  • Herbal switch: swap mint for basil for a softer, savory edge.
  • Bubbles: tonic = more bitter & classic; club soda = lighter and drier.
